Chocolate Beet Cake

What you need:


  • 4 medium beets peeled, boiled and pureed
  • 2 cups whole wheat flour/all purpose flour
  • 1 1/2 cups unrefined sugar
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking soda
  • pinch of salt
  • 2 large eggs
  • 3/4 cup warm water
  • 1/4 cup sunflower oil
  • 1 tsp pure vanilla extract

Method:

  1. Preheat oven to 350 degrees or 180 F. Whisk together flour, sugar, cocoa powder, baking soda, and 3/4 teaspoon salt in a large bowl. Whisk in eggs, water, oil, vanilla, and 1 1/4 cups beet puree 
  2. Coat a 9-inch round cake pan with cooking spray.  Pour batter into pan. Bake until a toothpick inserted into the center comes out clean, about 45 minutes. Let cool in pan on a wire rack for 20 minutes. Turn out cake from pan,  Let cool completely, right side up.
  3. Garnish as per desire.

Eggless Brownies

What you need:

All purpose flour – ¾ cup
Granulated sugar – 1 cup
Salt – ¼ teaspoon
Baking powder – 2 teaspoon
Unsweetened Cocoa powder – 1/3 cup
Unsalted Butter – ½ cup, melted and cooled
Yogurt – ½ cup + 2 tablespoons
Vanilla extract – 1 ½ teaspoon
Chocolate chips – ½ cup, optional
Chopped Walnut – ½ cup, optional


1) Preheat the oven to 350 degree F or 180 degree C 
2) First melt the butter in microwave or on stove top. And let it cool while you prepare baking pan and other ingredients. I recommend using unsalted butter, if using salted butter then skip the salt in the recipe.
3) Lightly butter or spray with non-stick cooking spray 8×8 inch baking pan
4) Take all purpose flour, sugar, salt and baking powder in a bowl.
5) Now sift the cocoa powder.
6) Mix well till incorporated well.

7) Now take melted and cooled butter in another bowl. Add yogurt and vanilla extract.9) Whisk well till everything gets mixed.10) Add dry flour mixture.11) Mix well. Do not over mix.12) Add chocolate chips or walnuts if using. And mix well.13) Now pour the batter into prepared pan.14) And bake it into pre-heated oven for 35-40 minutes. Check by inserting a toothpick in the center, if it comes out clean then it is ready. Let brownie cool completely in the pan before cutting. It takes at least 30 minutes.
15) After it cools completely,  using a sharp knife cut  as per your desire.
16) Dust them with powdered sugar and serve

Tiramisu

What you need:

1 tsp of instant coffee powder 
1/2 cup  hot water 
2 tbsp  icing sugar  
egg yolks 
1 egg white 
2-3 tbsp of cocoa powder 
250gm Mascarpone cheese 
About 15-20 ladyfinger biscuits (depends on the pan you use)

Method:

1. Mix the instant coffee powder with the hot water and beat lightly for a minute with a spoon. Set aside to cool to room temperature. 

2. Add the icing sugar to the egg yolks and beat well in a electric beater, now add the cheese and beat well.

3. Whip egg white until stiff. Fold this gently into the cheese-yolk mixture. 

4. Dip the ladyfingers in the coffee and layer them at the bottom of a square cake tin. Sprinkle cocoa powder over this generously. 

5. Layer half the egg-cheese mixture over the biscuit layer. You can add some berries at this time if you wish. On top of the mixture, layer biscuits (dipped in coffee) once more and top off with some more cocoa powder and the rest of the cheese-yolk mixture. 

6. Freeze overnight or at least 8 hours. Once it has set, sprinkle more cocoa powder or powdered sugar on top and serve chilled.

Whole Wheat Base Veg Pizza

What you need:

For Pizza base

Wheat Flour - 1 1/4 cups (I used Pilsbury)
Instant Yeast 1 tsp
Water - 1/4 cup + 1/3 cup (depends on the flour)
Sugar - 1 tsp
Salt - 1/2 tsp
Olive oil - 1.5 tbsp


For Toppings:

Onion
Capsicum
Babycorn
Plum Tomatoes
Mushrooms
Sweetcorn

I had 1.5  cups with all the above

Mozarella Chesse  - 1/2 cup grated
Cheddar Cheese - 1/2 cup grated
Tomato Pasta Sauce  - I used store bought

Garnish:

Black Pepper Powder
Oregano
Chilli Flakes
Salt


Method :

  1. In a bowl place the wheat flour, salt, sugar yeast, oil and water (1/4 cup) and gather the dough.
  2. Add more water as required little by little to make a pilable dough
  3. Place the dough in a warm place to double its size, mine took nearly 2.5 hrs since i live in a very cold place
  4. Also depends on the yeast. Cover the dough with a wet kitchen towel, leave it undisturbed.
  5. Once its doubled in size you need to place the dough on a lightly floured surface and punch it down
  6. Now roll it into a thin base, I made it into a big one pizza, you can make it into 3 small ones too
  7. Once rolled prick it with a knife fr even cooking
  8. Then spread the tomato sauce followed by Mozarella chesse and the toppings, then by the cheddar cheese 
  9. I marinated the toppings with pepper, oregan , chilli sauce and salt
  10. Bake it in preheated oven 200 deg for 15- 20 mins
  11. Once out of the oven garnish it with oregano, chilli flakes, salt and Enjoy :P

Aloo Tuk

What you need:

2 big potatoes
Oil for deep frying
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp garam masala
Salt as per taste

Method:

  1. Wash and peel potatoes, cut them in thick slices and immerse in cold water
  2. Rinse them in cold water for 3 to 4 times and wipe off the any water with a paper towel 
  3. Meanwhile heat oil in a wok and when you pat dry the potatoes fry them in the hot oil till the inside is a bit soft
  4. Drain them in a paper towel and remove excess oil
  5. Right before serving them you will need to deep fry them again till they turn a nice brown and drain it in a paper towel
  6. Add the powders and salt and serve them hot

Egg Roast

What you need:

3 - Eggs
5 - Onions medium sized
1 - Tomato Medium size
Few curry leaves
Few sprigs coriander leaves
1/4 tsp mustard seeds
1/4 tsp turmeric powder
1/2 tsp chilli powder
1/2 tsp jeera powder
1/2 tsp coriander powder
1/4 tsp garam masala
1/4 tsp ground pepper
1 bay leaf
1 tbsp ginger garlic paste
1/3 cup water
2-3 tbsp - Sunflower or coconut oil

Method:


  1. Boil the eggs, peel them and make small slits 
  2. In a broad pan or wok heat the oil, add the mustard seeds, curry leaves, bay leaf and onion and fry well not letting it burn
  3. Once the onions turn brown add ginger garlic paste and fry
  4. Add all the masalas and fry. After a minute or two add the tomatoes fry for a bit and pour the water
  5. Once it thickens add the eggs and mix gently not letting the eggs break
  6. Done!!

Sticky Toffee Pudding

What you need:

For the pudding :

1 cup  chopped, dried and pitted dates
1/4 tsp baking soda
3/4 cup  boiling water
1 1/4 cups  all purpose flour
3/4 tsp baking powder
1/4 tsp salt
5 tblsp unsalted butter, room temperature
1/2 cup light brown sugar
2 large eggs
1 tsp vanilla extract

Toffee Sauce:
1/2 cup light brown sugar
4 tblsp unsalted butter
1/8 tsp salt
1/2 cup  heavy cream 
1/4 tsp pure vanilla extract


Method:


  1. In a bowl place the dates and baking soda and add the boiling water and stir to combine and let it rest 
  2. In another bowl beat the butter sugar and vanilla till light and fluffy, add the eggs one at a time beating well after each addition
  3. Add the flour and salt to this and incorporate till its mixed well
  4. Add the dates along with the water and fold it into the mixture
  5. Bake in a pre heated oven at 180 C for 25-30 mins
  6. While its baking get the toffee sauce ready
  7. In a pan add the butter sugar salt vanilla and cream on low heat and mix till the butter and sugar melts and switch off
  8. As soon as you remove the cake from the oven poke holes with a skewer and pour half the sauce over the cake 
  9. Reserve the rest to serve while you eat
  10. Serve the pudding with vanilla ice cream or whipped cream:)
